It’s nothing new. But this oldie is definitely a goodie. It makes for a healthy, meatless meal. And, according to my husband, it makes for an awesome lunch when served on warm flour tortillas.
My friends know that I don’t like veggies. But when I make this salad, the bright colors and aroma of cilantro mixed with all of the other ingredients definitely makes me wish I did.
Here are the ingredients:
1 can black beans
1 can sweet corn
3/4 to 1 cup grape tomatoes roughly chopped (quartered)
1/2 large green bell pepper chopped
1/4 cup chopped red onion
Handful of fresh cilantro, chopped
1 Tbsp Olive Oil
2 Tbsp fresh lime juice (about 1/2 lime)
Nothing fancy for further direction. Just mix it all together. Serve on warm flour tortillas.
You can also:
– serve with tortilla chips or Fritos
– “fry” or heat up in a pan the beans, corn and peppers, then add to the other ingredients
– Add meat, like grilled chicken, and serve warm or cold
– Wrap it all in a tortilla and throw it on the grill
